Breakfast Sandwich

Hello all! Kim here...It is that crazy holiday season that always has me running around crazily! Breakfast during the week is always something I struggle with. By the time I have fed the kids, gotten ready etc...I usually forget to eat breakfast. Then I wonder why I feel horrible at 10am! I thought I would share this recipe, especially since it is that go, go, go time of year. You can eat it in your car as you drive away to whatever it is that has you rushing!

Breakfast sandwiches

1 English Muffin ( I like Whole Wheat)
1 egg
1/2-1 oz. cheese
Bacon, Canadian bacon,ham, sausage (whatever you like)

1. Toast muffin
2. Take a ramekin dish (Credits to my friend Meghann for this one!) and spray it with cooking spray. Beat the one egg and add the extras you like into it. The more you add, the longer it needs to cook. Cook between 45 seconds to 1 minute. Pop it out of the ramekin and onto the English muffin and you have a to-go breakfast!

Good thing about this one is that it is pretty kid friendly, too.

Question

As the family and I were leaving Sam's club today we were parked right next to the handicapped parking space. We didn't realize there was a minivan waiting for us and so when we saw it we quickly moved out of the way. The woman pulled in and rolled down her window and said, "Sorry, I am in a big hurry." We said no problem and watched as she preceded to get out of the van and then run , yes run, into the Sam's club entrance. Now, this left us a little confused :).

Engagement Day!

Today is July 3rd, and it actually happens to be the day Josh proposed to me. This day always holds a special place in my heart because it was actually more life changing than my wedding day. Sure, the wedding day was special and it was also life changing. However, if you think about it, the day you actually get engaged is more. It is the day where your life suddenly becomes two instead of one. It is a funny change where you have to start thinking of both people's needs instead of just your own. Of course while you are dating you still are cognizant of the other person, but this is on a new level.

Josh proposed to me in the afternoon after a long in depth conversation. It wasn't planned (which is actually more special to me because I saw him at the time where he made the decision and what his face looked like, not after the fact) and it came out as more of a 'what do you think' sort of thing instead of a question :). I asked him "What do you mean by what do you think?" He said "Well, what about if we got married?" I said, "What are you saying?" He said "What do you want it to mean?" I told him "I know what I want it to mean, but I want to know what you want it to mean :)" He then said, "I wanted to know if you wanted to be my wife." I said, "Yes!" Then he said, "Let's go shopping for the ring!" I was pretty happy about that because I never really thought I would go and do something like that. You see, Josh and I were the ones who never thought we would get married. Guess we liked each other some to do away with that :).

We found the ring and he wouldn't let me put it on because he said he hadn't proposed the right way yet. So we went down to Folsom on American Canyon Drive where the big waterfall is. We climbed to the top of it, and then as the fireworks started and lit up the sky, he dropped to one knee and asked me to marry him the proper way :). It was pretty special. So the rest is history, we got married less than 3 months later. Thanks mom for kickin' butt at getting all the flowers, dress, food, tables, drinks, photographer, etc. in that short of time! Pretty amazing! Love you mom.

Tonight to celbrate we are going to see the movie "Hancock". Looks pretty funny. Nice to go out on a date with the hubby.

Funny Bears

So yesterday while my mom and Bears were in Target, the girl who was at the checkout had a nose ring and some lip piercings. I guess they were brown in color. Anywho, Bears, who is my little observant one, says to my mom..."Nana, that girl has a dirty nose and mouth, she should clean it up!" My mom says to her, "You are probably right, Bears." So funny what things look like in the mind of a 3 year old!

Pilates

Yeah, it's hard. Very hard, especially after two children and not working those abs for a couple of years. My friend Jenn, Dorene and I went to the gym to actually take the cycle class, but they were filled up. So, we went to Pilates instead. Jenn had gone one time and Dorene and I were novices. Can I just say that we all laughed the entire time at the contortions our bodies were in! I mean, this instructor really made it look so easy...but not so much :)! It was hilarious. I am just glad there were no cameras in there filming us or mirrors in front to look at ourselves! Let's just say that I now know of muscles I never knew existed. I came home last night after class and plopped on the couch and I don't think got up again except for to eat some dinner and then to bed. I was that exhausted! Hopefully Jenn and Dorene felt the same way or else I am a wimp :). Did make it to cycle today, but had to leave 40 minutes into the workout because Bubbas pooped. Oh well :), the work of a mommy is never done...even at the gym! Actually, think they phrase it as the childcare worker interrupts your workout as, "I think so and so needs a diaper change". I feel like saying, "If you 'think' so, then can you come back when you 'know' so." :). I am such a brat! Anyway, the moral of the story is...Pilates, real good but real tough. Think if you are in shape and lean before you start this class (unlike, moi) then you could have a six pack tummy in a month!

Photo class

Today was a good day all around. I started off going to my photo class. When Josh bought me my camera at Ritz camera, it came with free classes. This was a great thing because it really has taught me a lot about shooting manually and using light with flashes and things. I have already taken two classes. They were about what f-stops (apertures), shutter speed and ISO (film speed) are. Also touched on metering systems on the camera so as to not overexpose or underexpose your picture, unless artistically that is what you are going for. Today we talked about lighting and how to use flashes properly, way that light wreaks havoc in your pictures and how to compensate for that. Basically I have really found a few gadgets that I would love to have for taking portraits of my kids and other peoples. Bring your kiddos over so I can experiment with 'em! First I have to buy a couple of things like a 5 in 1 reflector and then when I am really doing well a soft box. Pretty cool stuff that would really take my pictures to the next level. These wouldn't be for everyday point and shoot pictures, but when I had the time to set up the shot and have it static. Oh, would also love to have a new lens that 80-135 for portraits. Unfortunately these are a bit pricey and will probably be on my wish list for quite awhile :).

Anyway, starting to really understand this stuff on paper and now time to put it into action. Yeah, that's the scary part :)! Josh is so excited to talk to me about this stuff now and we are going to go on a camera date where we experiment with all these cool things. I know most of you are thinking, yawn, but it is a good thing for us. For those of you who don't know, Josh is a wonderful photographer. He used to shoot weddings and does nice things with those pictures. He has a good eye, so now I am going to pick his brain for all his tips and tricks. The digital realm in manual mode is still new to him as well as most of his shooting he has done with a medium format film camera. So it will be a learning time for both of us.

On a different note, Bubbas is still scootin' away. Everyday there seems to be an extra little push added onto the previous days. I think he is starting to get the idea that scooting can take him places. Also, little Bear has been doing wonderfully on potty training and I think I can officially say she is Potty trained! Woo Hoo! No more diapers for one of my kiddos! Truly a celebration indeed, for my pocketbook as well :).

Little Bubbas came down with a cold Thursday and today (Saturday) little Bear came down with it. Bubbas is at about 96% oxygen levels, they could be better but I will take 'em. Hopefully he takes the path of not going crazy with this cold and end up at the ER or doctor's office. We will think positively on this one. Pretty funny because I was talking with my friend Meghann on the phone yesterday. She knows all about how Bubbas gets a little crazy with his colds. She starting laughing and said, "Oh man, here we go!" So far he is still able to eat his mashed foods, which is much more than he is usually is able to eat when he gets sick. This gives me some hope. I think as long as this doesn't turn into a sinus infection or pneumonia we will be good to go. Bears I don't even worry about:). She is a toughie when it comes to getting sick. She will be drippy for 2 days and then done. Love it!

Big News!

Real quick...Bubbas did a 3 push military scoot this afternoon! What a day to celebrate! As you can imagine, this is a huge day for him as well as us and we are so proud of him and all his hard work. Way to go!!!

The other big news around here is Bears is putting poo poo on the potty (willingly)! Yeah for her! That is another major feat to be proud of around here. As you know, this has been a major struggle and I had tried every trick in the book on potty training. I finally did the one thing you are never "supposed" to do. I got mad. Yep, that's right, I got mad. After seeing she needed to go the #2 and asking her if she needed to go, her answer was no, and then 2 seconds later it ended up in the pull up. I told her I was angry with her because she knew she had to go and she willingly didn't put it in the potty. She was mortified, about time...this girl isn't easily phased, and told me she didn't want me to be angry anymore. I told her by putting poo poo on the potty she would make me happy. She said, "OK mama, I will make you happy next time." And you know what, she has done it every time now for the last 4 days! Didn't want to write about it too prematurely for fear that it would stop happening!
